We're thrilled to share our second-ever direct beef offering with family & friends! After a successful first round, we’ve refined our process with the team at Simon’s Gourmet Butchery in Bowral to bring you a premium, perfectly aged grass-fed beef.

  • Everything is Cryovac Sealed: All your meat is professionally cryovac sealed in standard 1 kg packs for superior freshness and freezer longevity.

  • Prioritized Cuts: This round, we've focused on maximizing your enjoyment by ensuring each main box now includes two different 1 kg steak packs: Premium Steak (T-bone, Cattleman, or NY Strip) and a highly-versatile Underrated Cut like Rump Steak. The box is rounded out with a generous mix of Mince and Thin Sausages, ensuring you get the most versatile meat..

  • Steak Thickness: Our premium steaks are now cut slightly thinner at 1.5 inches (approx. 3.8 cm) thick—perfect for a quicker sear or grill.

  • To make ordering and stocking your freezer easier, our core product is the 10kg Mixed Meat Box.

♻️ Sustainable Packaging

We care about your meat and the planet. All orders are delivered safely in a Chilltainer with two ice packs. The Chilltainer is a sustainable alternative to Styrofoam, which can take upwards of 500 years to biodegrade; in contrast, a Chilltainer is 95-97% recyclable in standard paper recycling and can go straight into your yellow-lid bin. Furthermore, the Chilltainer is proudly Australian & New Zealand made using only the highest quality materials.

What’s included in each box and how much?

Each 10 kg box contains a mix of Premium Steaks (T-bone, Cattleman Cutlet, or New York Strip), Underrated Cuts like Rump Steak, Rest Mince, and Thin Sausages. All meat is professionally cryovac sealed in 1 kg packs and priced at $20 per kg.

Where does the beef come from?

All our Speckle Park cattle are raised from birth on our Woodlands farm in the Southern Highlands, which is conveniently located halfway between Sydney and Canberra.

How long is it aged and prepared?

After being sent at about 18 months, the beef is dry-aged for 15 days at Simon’s Gourmet Butchery in Bowral, a process crucial for intensifying its flavour and tenderness.

How is the meat packaged?

All meat is professionally cryovac sealed (dry-packed) in 1 kg packs with no additives or preservatives. This method removes air to preserve freshness, prevent freezer burn, and prolong the shelf life of your meat.

Can I order some other cuts?

Yes! We have Add-Ons available to customize your order: Beef Ribs (packs of 4 on the bone), Whole Brisket, Osso Buco (1 kg packs), and Rump Steaks (1 kg packs). All Add-Ons are cryovac sealed.

How do I pay and collect my order?

You can pay via Bank Transfer (details sent after form submission) or Cash on Delivery/Pickup. Pickup is available Saturday Morning in Mittagong and Saturday Afternoon in Sydney (Balmain Area). Delivery is available via Uber Package at your own cost.

About us

Ebbwvale Speckles began as an Angus stud over 24 years ago. In recent years we've focused on full-breed Speckle Park, selecting for soundness, temperament, fertility—and of course, incredible flavour and tenderness.

Our animals grown up on gently rolling paddocks in the Southern Highlands, right between Sydney and Canberra, surrounded by open sky and fresh pasture.

How we raise our animals

We’ve raised each one from birth in a calm, family-run environment, guiding them slowly along laneways using rotational grazing. This careful handling nurtures both the health of our land and the well-being of the animals, ensuring they remain relaxed and stress-free

Now, after reaching around 18 months of age, they’ve been sent to Simon’s Gourmet Butchery in Bowral and are dry-aged for 28 days

Next week, these lovingly-prepared, premium bone‑in cuts will be ready for you to enjoy—each mouthful telling the story of care, patience, and respect for the animal and the land.
